Onion Corn Soup Recipe

6 portions

Ingredients:

  • 2 ounces butter (½ a stick)
  • 3 large onions, cut into medium cubes
  • 2 tbsp brown sugar or honey
  • 1.5 tbsp flour
  • 7 cups vegetable or chicken broth
  • 1 cup corn

Directions:

  1. Melt the butter in a large pot. Add the onions and simmer on low heat until translucent and golden.
  2. Add the brown sugar or honey and mix for 2 minutes.
  3. Add the flour and mix for 2 minutes.
  4. Add the broth slowly while mixing.
  5. Add the corn.
  6. Add salt and black pepper to taste.
  7. Cook on medium/simmer for 25 minutes.
